With roots in ancient Georgia and a production once limited to Eastern Europe and Italy, today skin-contact wines are found in most regions of the world, including France.

A widespread technique encompassing a wide range of microclimates and terroirs, macerating white grapes on their skin allows growers to depart from regional traditions while experimenting in the cellar.

With countless grapes, terroirs and stylistic options to choose from, whether it’s the type of vessel used in the cellar or the length of bottle-aging, results car vary widely, making for a keleidoscope of outcomes and flavour profiles.

Join our head sommelier James Lewis in the dining room La Cachette to discover some of today’s most exciting macerated white wines from France, alongside snacks from the kitchen.
