The Brussel-based lambic brewery Cantillon has become increasingly popular in the past few years, especially among wine lovers, who find in its beers familiar flavour profiles and an ability to age akin to that of wine. 

Bottles of Cantillon are rare and covetable items, and today some will go as far as travelling to Belgium to secure a case, or sometimes even just a bottle, for their cellar. But what makes this beer so special and sought-after?

Founded in 1900 by Paul Cantillon and Marie Troch, today the brasserie is run by Jean Van Roy, whose work in the cellar is largely inspired by winemakers. This is reflected in a shared desire to create a product with a distinct sense of place thanks to the use of different types of vessels, such as amphorae and old wine barrels, and spontaneous fermentations. 

Join us in the private dining room La Cachette to taste a selection of our favourite lambics and gueuzes, alongside snacks from the kitchen.
